Surrounding him, Zapotec mosaic patterns echo ancient stone designs by
Floral motifs, inspired by Oaxacan textiles and women’s embroidery, symbolize femininity, abundance, and cultural celebration.
The Heart of NA TII
Grinding (Molienda)
The grinding is done traditionally using a tahona—a circular stone wheel weighing between one and a half to two tons that rolls over the cooked and chopped agave to crush it and extract the sugars for fermentation. The stone is pulled, in this case, by a horse. This process takes between 5 to 6 hours.

- Type of Still (Tipo de Alambique): Copper bell-style still, consisting of a pot (the alembic) with a capacity of 200 to 350 liters, a bell (mortar), a vapor conductor tube (trovando), and a coil (serpent).
